Looking for an extra special, summer, non-alcoholic drink? Look no further! This frozen mojito mocktail is made with the same ingredients as a classic mojito but replaces soda water with ginger beer. Ginger beer is amazing for any drink when you are avoiding alcohol because it gives you a similar burn. Ginger beer, lime juice, fresh mint leaves and ice are blended to create a fun, frosty, icy, slushie drink that’s super summery and every bit as satisfying as the classic, even without rum.

The secret to a fantastic frozen mojito mocktail is a powerful blender. No problem, the Vibe Blender System will turn ice and fresh mint into bright and refreshing slushy goodness in no time. When it’s done, pour it into your favourite cocktail glasses, then garnish with fresh mint leaves and lime rounds.

Serves 2.

INGREDIENTS 

20 fresh mint leaves
¼ cup freshly squeezed lime juice (approx. 2 limes)
1 cup ginger beer plus extra to fill glasses. (we used 375ml bottle)
2 teaspoons of sugar (or maple syrup) or more to taste
2 heaped cups of ice
Mint sprigs and lime for garnish

METHOD

1.   Add all the ingredients into the Vibe Blender jug. Secure the lid on and blend on ‘smoothie’ mode until the ice is finely crushed and the mint leaves are no longer visible. You want a smooth slushy consistency.
2.   Pour into glasses, add remaining ginger beer and garnish with slices of lime and fresh mint leaves. 
3.   Enjoy
